How would YOU modify this recipe?

I'd skip the mayo and cream cheese, since it would be alot of work to put that mixture on each individual bread cube! I'd use a drizzle of olive oil, some garlic powder, and then sprinkle that with the mozzarella.
 
You'd skip the spaghetti sauce, as well?

The thick coating of creamy cheeses was what protected the bread cubes from becoming soggy once the spaghetti sauce was added.
