Last night I made Huevos Rotos
I made my chorizo meat 36 hrs before and left in the fridge.
The key is to make thick but crisp fries.
Shape your chorizo into small balls and fry till crusty, take your balls out of the pan and keep warm.
Make your fries very crisp then toss your balls into the fries, quickly fry your eggs in the fat left in the pan(they should be sunny side up and runny) slide your eggs onto your fries with the paprika flavored fat, stab the eggs so the yolk runs into your hot fries.I like to split a crisp french stick and fill with this mix.

I love proper Spanish Croquetas, the kind with bechemel, manchego and serrano ham. Not the potato version you get in other countries.
or
Artichoke hearts with lemon, olive oil, thyme, salt and pepper.
or
Good quality anchovies drizzled with olive oil and a squeeze of lemon
or
Morcilla with roasted garlic and olive oil
or
Crispy Gambas that can be eaten with shells and all
or
Chorizo with chicken livers, had these in Barca but I don't know how to make it :(. It tasted spicy and I think there was vinegar and olive oil in it but I'm not sure

smashed chickpeas with garlic, olive oil, lemon etc. Like hummus but chunkier
or
toasted baguette slices rubbed with garlic and drizzled with olive oil and fresh tomato.

good marinated olives
or
those spicy mini meatballs they have etc etc etc.
Darn I miss the food there :(
 
I love the different tortillas, chorizo & cheese, Spanish tortilla, spinach and mushroom.
Broiled or deep-fried sardines, tuna&olives. Calimari. Garlic shrimp...or wrapped in serrano ham.
Pimientos stuffed with crab salad. Little pizzas, bruschetta.

I think I just discovered our Thanksgiving feast this year. Tapas!
