My plan was to make Ground Beef Tacos tonight,
but when I went looking for that leftover 1/2lb
of cooked Hamburger meat, I can't find the dang thing! :huh:

Oh well.
This past weekend I went deep freezer diving and came
back up with several "tidbits", odds and ends of this and that...

So this entire week will be dinners made up of those things.

Tonight, DH will be having the singular Costco Chicken Cordon Bleu left
with fresh Green Beans (I only have a single serving left)
and roasted potatoes

While I will be eating a Prime Rib Hash
I found the leftovers from the night we went out to eat,
like what? a month ago? Anyways, DH does not care for
any sort of Hash (he really does, but I don't have enough for two)

What are you going to put on your Dinner Table? :chef:
 
Its freezing out so, comfort food..

Meatloaf w/gravy, mashed potatoes and corn..

Didn't make a dessert but, Jeannie received some wonderful chocolates from a daughter so, we will try to limit ourselves to a piece or two.. :pig::angel:

Guess which emoticon is me.. ;)

Country captain chicken had some positive comments, so I'll make it for the first time tonight. According to Southern Living, "Country Captain Chicken has been a staple of Junior League cookbooks in the Southeast since at least the 1950s and is found in various forms in cookbooks from as far back as the 19th century." So it's got to be at least as good as things like ambrosia salad, casseroles made with a can of soup, etc. I guess I'll find out. Broc on the side.
 
Well I was going to make pizza but everyone wanted calzones again. So repeat calzones for dinner.
 
My younger daughter and I are making picadillo empanadas for dinner tonight. Broiled zucchini for a veggie.
 
I'm going to a class to make a charcuterie board at a local butcher shop tonight. I'm going to have a salad before I go, since tastings of their housemade charcuterie is part of the class.

I'll come home with something like this.

We're having tacos! I have a number of packages of pulled meats in the freezer. We'll have pork tonight. Yellow rice and black beans for sides. Ooo, and I have time right now to make quick pickled onions before we leave to run errands. See ya!

DH claimed that he didn't like Frito Pie, "What is it anyways" :rolleyes:
I made this one day for lunch for myself.
DH had said that he wasn't hungry and didn't want anything.
I had picked up a small single serve bag of chips and had some of my Paniolo Chili leftover in the `fridge.
Topped it with chopped Onions and shredded Cheese...
As I drove into my plate, guess who comes over to investigate?

DH: Ooh, what's that?
Me: Its called Frito Pie
DH: Can I have some too?
Me: I thought you said that you didn't like Frito Pie?

Exceeded expectations, but with a recipe from the 50's (thinking my mother's cooking), were pretty low.

Actually, it was pretty tasty. I think that next time I'll try it with b/s thighs. I used currants, because that's what I have at the moment. Curry with the other flavors was a good combination.

TS, which recipe did you jump off from?
I was looking online and there are so many different ways to make it...
 
That's actually a pretty good recipe. Fritos, chili and cheddar cheese are the core of the dish. Diced onions and japs are acceptable garnishments.

For more authenticity, serve them right in some Fritos bags.

Casey, I've thought of doing that many times,
but I just can't bring myself to do it.
Who knows what kinds of germs and nasty little bits
might be clinging to that package.
With all of these food recalls and folks getting gravely ill from
foods, one can't be too cautious :(

The Fritos were in those bags at some point. :ermm:

Besides, just wash the unopened bags with some soapy water, rinse, and you should be good to go.

It doesn't change the flavor one bit. But, if you grew up going to Friday Night HS football games, it is a bit of nostalgia.

I wound up making a much bigger pan of Hash then I thought :stuart:
That's okay, I'll have leftover-leftovers for breakfast
with a basted egg on top MMM!

Pleasant surprise. We had given DD a ceramic pie plate for Christmas. Today she brought it back filled with an apple pie! So we had pie for dessert!
 
My kitchen is too cold to spend much time in. The kitchen has ten-foot ceilings, and the rooms next to the kitchen have 24-foot ceilings, so when it is 25-35 degrees outside, all the hot air is 24-feet above the floor. :rolleyes::mad:

So, quick cook tonight of pasta aglio e olio (with bacon... ummmmm, baaayconn).

Brought a rib eye end home tonight..we get a couple a day and they are irregular shaped so sometimes tying them up gets a nice piece..
