SO had a craving for an Italian sausage sub with sautéed veggies. So I sautéed some onion, mushroom red and green peppers along with the sausage for her pleasure. Tater tots and a beer rounded out the meal.

I made a turkey roaster pan of lasagna. It was the deepest pan I have. We had some with salads tonight. I'm taking a slab to my eye doctor when I go in on Saturday, some will be set aside for Saturday, and the rest will be portioned and frozen for a few upcoming dinners. We really splurged and had a bottle of wine! No box tonight.

I assembled every last one of my spoons and made supper. It was fusilli carbanaroid and a leafy salad with homemade vinaigrette. It was worth the effort. Yeah, that's usually an easy meal, but with the pandemic dragging on and wearing on me (and everyone else), it was all the spoons I could muster. Yummy

Last night's dinner was Salisbury steak, steamed spinach, mashed potatoes and onion gravy.
