Tonight's dinner was panfried NY Strips (med. rare), mashed potatoes and steamed carrots.

Everything went into the oven tonight: ham, Brussels sprouts, purple and golden beets, and russet potatoes. I baked four potatoes for the two of us, planning ahead for stuffed baked potatoes later this week. As my Mom would say, "schmart". LOL

Strawberry Jell-O with Maraschino Cherries, Spatchcoked, roared chicken, Rice cooked in chicken broth with chicken pan drippings mixed in. Made a flavorful broth from chicken back, and BTB chicken soup base, with added garlic, onion, sage, and white pepper. Injected into the bird after spatchcocking it. Let it rest for 45 minutes to allow broth to distribute inside the meat. Robbed bacon grease on dry skin. Seasoned inside and out with salt, and garlic powder. Skin is very crispy. Checked temp, and it reads 157. Carryover cooking brought temp to 165 after 15 minutes. The meat is very juicy, and tender. I'm very happy with this one.

My m-i-l made meatloaf, mashed potatoes, and gravy. That was served with salad from a kit and leftover roast vegis and Brussels sprouts from yesterday. That meatloaf was the best meatloaf I have tasted that wasn't made by me or my mother.
 
Yucky weather here in Cowboyville,
so I decided that we three needed Noodle Bowls.

Kamaboko or Japanese Fish Cake
Baby Bok Choy
Green Onions
and lots of steaming Daishi

Mom hasn't had this probably since she left Hawaii 14 years ago :ohmy:
I can't tell you how many times she said thank you and this is so good and this really hits the spot :)
