Is there really no supper thread for Saturday yet?

We had smoked salmon on bagels with cream cheese, etc. We also had some dolmas and some marinated artichoke.

What did you have?
 
I made chicken breast stuffed with brie, apples, and walnuts, topped with an apple cider and apple cider vinegar pan sauce. It was served over spinach sautéed with garlic and mushrooms, with whole roasted carrots with ras al hanout on the side. The pictures didn't come out very good, but everyone agreed it was delicious.

My son and partner came for supper. I had been promising her Beef Wellington and pop-overs for ages. So did a freezer dive and found a tenderloin.
Cut it in half for ease of prep.
Used two different liquors in the Duxelle. One had Vermouth and the other Sherry. Both were deliscious but think I prefer the Vermouth.
Wish my picture taking skills showed off how spectacular they looked. You will note there is no picture of the pop-overs - a complete fail! LOL Just couldn't work the timing for the temperatures in the oven. Golly sure would like that second oven!!!
