With all the fast food places our little town has, there is no Taco Bell, so we drove about 15 miles to the nearest Taco Bell for supper. James had one of the 5-Buck boxes and I had a #1 (Burrito Supreme and Taco Supreme). Cubbie got a burrito and a cheese roll-up, and the cats are now splitting a cheese roll-up. Gotta take care of the kids too! :LOL::ROFLMAO::LOL:

Z, how do you make pimento cheese?

I make it often enough that I used to make sure I had a jar of pimentos on hand all the time, but I like it in other dishes too, so I bought a larger jar of sliced roasted red peppers. Once opened, I spooned a couple of tablespoons into zip bags and froze them, as pimentos will go bad (mold) fairly quickly once the jar is opened.

That is a great tip! I found out the hard way about the mold. I guess I thought that they would last like pickles. I never thought about freezing them.

It was maddening to find after preparing some cheese for pimento cheese and no pimentos.:mad:
