Sunday Dinner, 1/16/11

Thirty steamed cherry stones, dipped in melted butter (20 for me & 10 for DW) and a pint of coleslaw each. Plan to make clams casino with the next thirty. Will use the liquid from tonight's batch to make a quart or so of chowder.

Today is a soup and sandwich day.

I thawed out the container of MsMofet's Confetti Soup and will make Pimento Cheese, plus I already have some Chicken Salad.
I have never had pimento cheese but it should go well with the pimento in the soup. How do you make the cheese?
 
Early dinner today because daughter has to work on a class project with a classmate.

Spinach Salad topped with bacon & mushrooms (Dressed with Basil Vinaigrette with whole grain Dijon mustard added)

Mushrooms breaded and deep fried in only bacon grease. (OMG were they good!! Not greasy at all because the fat was very hot and sealed the breading instantly, this kept all of the wonderful mushroom juice inside until bitten. I will be doing that again)

Homemade Bean with Smoked Ham & Bacon Soup (This is a first run for this recipe and I did it in the pressure cooker. I soaked the navy beans overnight and it only took 8 minutes to cook them)

I have never had pimento cheese but it should go well with the pimento in the soup. How do you make the cheese?

I only made a small batch for myself. I used:

2 oz. softened cream cheese
2 oz. prepared Parmesan
4 oz. grated medium cheddar
1 sm. container of pimentos, minus a tablespoon used in the Confetti Soup.

I mashed the cream cheese together with the Parm. using a fork, then added the cheddar and pimento then mixed well with mayo. Very good!:chef:

My dinner turned out very good. Pork and the beans could have both used a bit less salt, but very good. Here's a link to some photos of the food I posted in another thread regarding the pork roast.

Was the jar of pimentos just roasted red pepperes in oil/liquid or brined like the kind in stuffed green olives?

In oil/liquid (not drained as it just adds more pimento flavor.)

It might be good with chopped olives w/pimentos, but I've never tried it.
 
Summer weather here today......woo hoo...sunny and 82 degrees out there.

Will fire up the barby and stovetop smoker for either country style pork ribs or Tri Tip later. Think I'll even do Sesame Noodles since it feels so much like summer. Sure wish I had some summer home grown tomatoes for the salad!

Don't rub it in or anything...:-p Can't wait for summer!! We're building a house and we'll be in the middle of it by then....at least I hope so!

My wife is working today and gets home at 9:30, she requested Brown Rice, Dominican beans, and Beef stew with all the trimmings in it. Carrots, Plantains, tators and an assortment of other seasonings. Just finished cooking and cheated a little. I usually wait for her to get home and have dinner with but it tasted so good that I had a little bit.

What on earth are dominican beans???? Share please, I love beans in any form... :):):)

WOW that sounds good. Plantians in a stew wow I would have never thought of that.

Now I have a craving for fried platanos. I haven't had them since I had them at girlfriends boyfriends house (his mom made them). Many moons ago when I was a teen.
 
ribs w/ homemade bbq sauce
roasted chicken w/ butter , thyme
steamed broccoli w/shredded cheese of some sort
pasta of some sort , perhaps with a garlic sauce
 
Seems like a good day for a meatloaf. Today I will mix in 2 Italian sausage links worth of pork into 2 lbs of ground beef for some added flavor. Will be serving with brown gravy, mashed potatoes, and probably corn or green beans, and some biscuits.

Tried to trick the kids into sticking around for dinner by telling them we are celebrating the dog's 9th birthday which was last week. They didn't seem too impressed so not sure if they will be here for dinner! If not lots of leftovers and the dog will get her own helping!

Dominican Beans, simple, I use pinto beans, I used to get the Goya kind, but now I just get the dried ones and boil them till soft. Cans are ok, but its cheaper to get the dried ones. so here it goes,

a bit of oil on a pot, red onion, green peps, oregano, salt to taste, cilantro, a bit of cumin, lemon juice, garlic, capers, olives. Saute all that in hot oil then put the beans in and add water as needed. I like mine thick so i dont add too much water. Add tators, carrots, platanos once all is boiling. dont add too much carrorts they tend to make the beans too sweet. add a bit of tomato paste for tanginess. I chop up all the veggies into 1 to 2 inches. Its so good I take bowls of it to work for lunch and have it with bread as soup.

I love fried patanos (Tostones), the green ones, not the sweet. I make them for breakfast on the weekends with liver and onions. My kids hate it, but my wife and I love it. My kids are not growing up liking Dominican Food. Its a shame I have so many recipes from my gramma. She used to cook all the time for my grandpas workers in the farm so i learned alot from her.
