We ordered submarine sandwiches from Dagwood's. We shared a limited time offering of a Montreal smoked meat sandwich. We each got another sandwich, in case the shared one wasn't very good, but it was.
 
I am trying a new recipe I heard about somewhere I wrote a recipe for. Pineapple & black bean enchiladas, Mexican rice and a Pepsi Zero Sugar. Wally World single serve apple pie for dessert.

I make my own enchilada sauce from scratch. As with spaghetti sauce, I would never used canned or jarred sauce.

The Mexican rice is also a personal recipe I make using brown rice, bell pepper, jalopy pepper, petite diced tomatoes, Mexican seasonings, and instead of water I use beef broth, chicken broth or vegetable broth, depending on the entrée. With the pineapple and black bean filling in the enchiladas, I used vegetable broth for the rice.

We had stuffed shells..ricotta and spinach..I used a container of meat sauce I had in the freezer...
