I baked a store bought pork tourtière. I served it with potatoes and a salad with homemade vinaigrette, oh and gravy. I may have eaten too much. We may also have had a bit too much wine. We finished off a one litre bottle of Toro Loco Rosé.
I am not often pleased with chicken cooked in the oven, either whole, spatchcocked or in pieces.
As a result, I'm always trying new recipes. I think I found one. It's the Cook's Country recipe for "CAST IRON BAKED CHICKEN" and it came out great.
I cut up a 4 pound chicken, dusted it with a rub that's part of the recipe. Heated a CI skillet in the oven, added the chicken for 15 minutes, flipped the chicken and did another 15 minutes. Rest ten minutes and serve.
What makes this especially gratifying is that SO loved it too.
Wow, I feel like a slug for making just a pot of soup tonight. It was the first time I made Rachael Ray's "Tortellini in Brodo with Mushrooms", but it might not be the last. Tasty little bugger, but did it make a mess of the stove top!
