How can we ignore America's Junk Food-Fest?

I've made guacamole. We have cheeses, crackers, fruits, sausages, chips, hummus, pita, etc. Frank is making dinner!
 
There are just two of us and we're not feeling very energetic. SO loves pigs in blankets so that's on the list. Also some salsa and tortilla chips, pizza rolls and liquids.
 
Just two of us. I usually make way too much. Classic example of my eyes are bigger than my stomach ( although my stomach is catching up lol).

Keeping it simpler
Veggies and spinach dip
Nacho loaded.
Guacamole ( not sure if Im keeping it on the side for putting I on the nachos yet).

All that being said, I got a fully stocked kitchen ready to go, so I cant rule out any last minute additions.
 
Oh that I could still eat all the superbowl snacks. i'd be making Samosas. Pigs in the blanket, a cheese and salami tray, Olives, filled with can cheese, and baked chicken thighs, with bbq sauce, or my smouldering chicken.

Another great coating, and this would be good for wings, 1/2 cup Stove top Stuffing, sage flavor, 1/2 cup panko bread crumbs, Plae in food processor, and pulse to crumble the Stove Top and mix all together. Add 1 tsp. ground pepper. dry chicken and dredge in flour, egg wash, then bread crumb/stuffing mix. Place on parchment paper lined cookie sheet, and bake at 375' for 30 minutes. Serve with hot sauce.

For a change of pace, add chili powder to 3 tbs. ghee (clarified buttrer), and heat in a large pan. I use my Atlas flat-bottomed wok. Add 1 tsp. popcorn salt. Heat until kernels are all popped.

For an alternative to popcorn, or potato chis, cut uncooked rice spring roll papers into bite-sized pieces with kitchen shears. Place these, a few at a time, into hot cooking oil. They Will instantly puff up into a crunch/soft chip that can be seasoned as you like. Delicious.

I have lamb chops marinating. The weather should decide if they are grilled or if I sear them in cast iron.

And, evidently, we have tons of snacks.
 
We don't do the sports thing. But it's snowing again, and we just want easy dinner. DD picked up appy and dessert "this and thats". So we'll see what we end up with.

We have tortilla chips, guacamole, chunky salsa and onion sour cream in bowls.

This didn't make newly revised menu until yesterday, Thank you below zero weather: Chili and home made corn bread. It's just us two and this is plenty.
It's also no sacrifice, regardless of weather, to have a little ice cream too.
 
Chief, what is "can cheese"? If it's a typo, I can't figure it out.

It squirts out of a nozzle, and is like a very smooth and spreadable Velveeta cheese sauce, but thick enough to hold its shape. It's good for filling ripe, pitted black olives, or on Ritz crackers, or celery sticks. He's an example:

what I used to purchase was far cheaper in price, and came in cheddar, sharp cheddar, white cheddar, and other flavors.

It would be easy to make by simple melting Velveeta, and adding a little milk or cream, and stirring it in until; you get the desired thickness. And you could even add some good cheese shreds to the mix for better flavor.

The advantage of this cheese product is that it comes in a pressurized can. You simply push the plastic nozzle to the side and cheese squirts out, making it easy to use.

Appys for dinner - Spanakopita, clams casino, combination pizza rolls and fries (chili and cheese sauce on the side). DD's also had a pretzel dog.

Since our regular, local Chinese resto went out of business during the pandemic, we haven't ordered any Chinese food. Today we gave another local Chinese resto a try. DH had been there once, back in 1989 and didn't like it at all. Well, it's been a few years and some friends have said it's good, so we figured we would see how they are now. We ordered from them. The food was really quite good. We each had an imperial roll and an egg roll. We shared some vegi fried rice, some barbecue pork with snow peas, and some Cantonese style chow mein. I'm glad we found out. We will definitely order from them again. Lots of leftovers.
 
Welp. Not Super Bowl food but, we have Gzoya, egg rolls and ramen.

Around here, it is like second Christmas. And your appy spread looks SuperBowl perfect!
 
We had fancy salads (romaine, roasted pears, sauteed prosciutto, chopped pistachios, feta cheese, homemade lemon vinaigrette) and finger foods.

That salad sounds wonderful. I just asked DH what he thought and read him the description. He said it sounded good but wasn't sure about the "lemonade vinaigrette". Oops, I did read that out as lemonade. :LOL: :rolleyes: He says that it sounds better with lemon vinaigrette.
