Almost no spoons, so we just put out some charcuterie, cheeses, bread, and condiments. We had it with white wine. That was a pleasant supper.

We had Italian sausage sandwiches smothered with onions, peppers, and mozzarella cheese. More mozz topped another batch of corn and tomatoes seasoned with Tajin.

On my way into town I had decided I would have Hot Roast Beef Sandwich with mashed potatoes and brown gravy. Halfway there I thought, no maybe I'll have the liver and onions (with bacon). Sat down in the restaurant and was still trying to decide, I was too early for the Prime Rib. Then I noticed they had Gumbo listed for the soup of the day.

I ended up with a large bowl of Gumbo, yum!
 
Pot roast, baby bella au jus, mashed potatoes and steamed baby spinach.

I did Lasagna cheese and spinach roll ups tonight. I learned a couple things since I last did them and it sure made it a quicker and easier job.


I laid 8 lasagna noodles in a large rimmed sheet pan, poured boiling water over them and covered the pan with foil. By the time I made the filling, the noodles were perfectly pliable. I laid all 8 noodles side by side on my granite breakfast bar, and divided the filling onto the noodles rolling them all up and placing in the prepared 9x13 bake pan. I baked them at 375 for 30 min. They were sure tasty, with garlic toast and glorified salads, and we have enough for another meal.
