We had tilapia with bruchetta, double baked potatoes, and cucumber salad.
No dessert, tonight, but I have a carrot cake in the oven for tomorrow.

Steak Tacos with a Thai Peanut sauce & Salad with a lime/cilantro dressing.

Poor husband didn't get home until after 9 tonight, so I had a sort of "caribbean tofu toss" ready for him, which he told me he wanted.

Cubed "Caribbean Spiced" tofu tossed with Goya yellow rice mix & small fresh French haricot verts green beans, sliced baby zucchini, a can of drained & rinsed black beans, & a liberal addition of McCormacks "Jerk Seasoning".

Husband love it. It was just spicy "enough" + almost comfort food after a late night at the office.

I had hot dogs, potato salad and vanilla fudge ice cream.
