Time to think of what kind of tacos I want to make tonight.

TB had tacos yesterday so that will have to do!

It is my 60th today and my in-laws are bringing pizza (including a gluten free veggie for me) and I am, of course, making my cake. It will just be a simple vanilla cake with fudge frosting and no decorations or candles.

I had dental work done last week and still have two temporary crowns until next Tuesday. It is extremely hard to eat anything that needs a lot of chewing so I will have dip for my pizza and have some soup on backup if I can't eat the pizza.
 
Crispy skin roasted chicken thighs, seasoned bread cube dressing, gravy from drippings, peas and carrots.
 
Tacos sound wonderful, but I have leftover short ribs, veggies, mashies, and gravy leftover from yesterday - so that's what it'll be.
 
Salmon Genovese, at least that's what the Black Dog Tavern on Martha's Vineyard calls it. Baked salmon filet with thin sliced red potatoes with a bunch of basil. Green salad on the side.
 
No taco stands in rural Ontario. We had a chicken curry

DH and I got back late yesterday afternoon
from our road trip and did a crash and burn.
No Taco ingredients available, as I had pared
down my larder prior to departure, about 2 weeks ago.
So I made Kara`age Chicken, steamed white rice
and my quick cucumber kim chee.

Did a deep fry, with all the windows open ...

and dinner was served!
Our first home cooked meal
in about 2 weeks and it was delicious!!

Edit > I meant to say that I was planning
on sharing some of the Fried Chicken
with Miss Neighbor-Across-The-Street,
to thank her for tending to my "Lucky Bamboo"
but DH ate it all ...

Well, somebody's got to make tacos, and I'm just the guy to do it. :chef:

I grilled some chicken thighs seasoned with Fiesta chicken fajita seasoning (a popular brand of spices here in Texas), and grilled on the Weber gasser.

Lettuce, cheese, dice onion, jalapeño slices (from the garden -- HOT!!!), and Mateo's salsa (local brand) for toppings. Flour tortillas.

They were big tacos. I'm stuffed!

We didn't know it was taco day - not that it would have mattered. While looking for a place to eat, tendrils of pork and red oak tickled our noses, so we pulled into a BBQ place in West Stockbridge - the Shaker Mill Tavern. I had 1/4 rack of ribs (4), smoked beans with pulled pork, and cornbread. Everyone else had pulled pork sandwiches with coleslaw and beans (Himself) or house cut French fries (our friends). So good!
 
We had tacos last night. We planned them before we knew it was taco day.
