Stuffed Hasselbeck eggplant, tomato, fresh moz and pesto, plus caramelized onion/gruyere stuffed bread.

I made ham and bean soup last night for today. By the time I portioned it out for the freezer and to give to my snow blowing neighbor, there was just enough soup for one of us. So...I made cheesy cauliflower soup tonight. We'll worry about enough leftovers for tomorrow's supper tomorrow.
 
We had the other half of the tartiflette. I served it with an interesting salad: red sorrel, Boston lettuce, mizuna, thinly sliced onion, thinly sliced Belgian endive, a few corn kernels and peas from the freezer, a few pecans, and some honey fermented cranberries, and a homemade vinaigrette. That was a tasty supper.
 
I tried to make a spaghetti casserole-pie-ish thing out of the leftovers from the night before. It did not turn out as I had hoped. It was "okay" but a bit too rich. :ermm: I wont be making it again.
