Dinner;
Ham & Cabbage with Baby Yukons, Boiled Beets............

We had hot dog shaped Polish sausage, served on hot dog buns. There was potato salad, macaroni salad, and dill pickles as sides. Chopped red onion, sauerkraut, yellow mustard, and Dijon mustard to dress the dogs. Pretty good for very easy.

We had beef tacos with homemade guacamole and "doctored" up Knorr Spanish Rice. (I replaced some of the water with Salsa Verde and tossed in a small scoop of chicken Better-Than-Bouillon.

Rustic ramp and mushroom tart/quiche. The pastry was made with a compound butter of ramps, lemon zest, s and p.

We had romaine salads with olives, cuke, tomatoes and mozzarella cheese, followed by spaghetti with homemade meat sauce... and a "dusting" of P-R cheese.

A multi-cultural inspired dinner:
Chicken Katsu (Japan)
Fried Noodles (Hawaii)
Kong namul - Beans Sprout Salad (Korea)
My quick Cucumber Kim chee or Kimchi, whatever (Korea again)

*belch*

We're both STUFFED!!! :LOL:
And there's still plenty leftover ... and I'm NOT sharing this time! :rolleyes:
 
Geeze. Looking at these meals makes me feel so inadequate.

Cold, snowy day and we had the blahs so we just had porknbeans w/chopped up wieners, along with bread and butter. :ermm:

Pumpkin pie for dessert.

I kept it simple this time :)

One sheet pan chicken drumsticks, with potatoes and some veggies :)

I roasted a 3.5-lb. pork shoulder on Sunday. Last night I made salsa verde with tomatillos from last year's garden, simmered chopped pork in it and made tacos. I also made zippy refried beans by adding red salsa, lime juice and cilantro from the garden to canned beans. Topped it all with Cotija cheese.
