Wednesday's Dinner- June 6

Speaking of something different, my wife asked me to use up the large bag of locally grown arugula. So I did an arugula, goat cheese, raspberry salad with a raspberry vinaigrette. I then sauteed some chicken thighs which I chopped and tossed with spaghetti with an arugula pesto and heavy cream sauce
 
So am I--was just out weeding (again) the small garden. I can have lettuce, Swiss chard, green onions, pea greens, beet greens (have to thin them), and radishes today in a big salad. I have some apples and grapefruit, almonds, and left over chicken. An EVOO and vinegar dressing, and I'm good. Maybe a hardboiled egg on the side...grated Asiago cheese....oh, I have some fresh apricots.
