Wednesday, 4.22.20, what's for dinner?

Duck breast, we shared 1 cause I wasn't real hungry, spicy cherry chutney, and rice pilaf. It's been a long time since I made rice pilaf and I forgot how much I like it! The cherry chutney was really nice with the duck.

I have a corned beef simmering right now. I better check on it - I think it might be time to add veggies. Sure does smell good in here!

Ham & Collard Stew

I think this ought to be served with cornbread but out of laziness, I ate mine with whole wheat noodles.

Elite repeat from yesterday--- tacos, cowboy caviar minus black eyed peas, tortilla chips and if we're good, chocolate ice cream for later.

I had a BLT on wholegrain wheat toast. DH was participating in a roll playing game, that is usually in RL, but for the duration, they are doing it via a virtual table top and Google hanguouts. He had reheated pizza. I got hungry later and had some of the leftover pork roast from yesterday on crisp rye bread.

Thawed, breaded and baked cod from Aldi.. Sides were stacked tomato and avocado slices, topped with Aioli and crispy hash browns..

Ice cream bars for dessert..
