Cheeseburger with fried onions on homemade roll

Tres quesos (3 cheese) stuffed eggplant with salsa escalivada and garlic allioli. We really liked this, especially for a vegetarian dish.

I made a pork dish with a herb cream sauce. It is supposed to have mushrooms, but Stirling doesn't like them, so I left them on the side for me. I served it over wholegrain wheat linguine with a salad with homemade vinaigrette. I had cut the pork loin into thin slices for schnitzel before I froze it. I didn't have the spoons for schnitzel, so I made this dish before it went off (DH thought it needed to be defrosted, so he did. :ermm:) Turns out the meat was sliced so thin that it overcooked. It still tasted good. We had it over linguine and served it with a salad and a Spanish rosé wine. It all tasted good even if the meat was a bit on the chewy side.

Most definitely, it's leftovers tonight...either the leftover Fancy Crack Slaw or Souschef's two remaining Chimichangas. We each have a choice, and there will still be enough for lunch tomorrow. Whooo Hoooo.

Our local restaurants are still only doing Take-out/Delivery
until May 14 or 15.
I really didn't feel like cooking and the Community over aways,
has their own "Country Club", Golf Course AND Bar.
We'd never been before.
Each night they offer a different pre-set meal and Saturdays
are Prime Rib Night.
I called in this past Tuesday and placed my order ahead,
as suggested.
I went over at my allotted time slot for my pick up and
they had no knowledge of my order :huh:
No problem!
The Manager, and only worker-bee,
said that Chef could have it ready in 10 minutes,
would I mind waiting?
Nope, I'm retired and I really don't want to cook tonight.
"GREAT! Can I offer you a drink from the Bar? No charge,
on me for being so nice and waiting."
SURE!

Not bad for $21.95 + tax AND a free, very generous pour of
Wine!
Eight ounce Prime Rib, Mashed Potatoes, Vegetable and a Salad.

I didn't get two sips in and chatting before our dinner was ready to go!
"Ya know that the laws have changed in this County.
So long as you have a cover on your adult beverage,
it's okay for it to be to-go.
All of my deliveries have included an alcoholic drink, or two,
like Long Island Ice Teas, Margaritas.
You can take that with you."

That's just terrific Kgirl, I wish we had the same available here. I'm tired of cooking every day too.
 
You're about to kill me Andy! Is SO gone? Was that duck like the chickens with "Dolly Breasts"?



SO is here. We just had individual meals. She made golabkis which I don’t care for so I pulled the duck out of the freezer and viola!
 
I finally hit the kitchen wall, so to speak. We decided to celebrate Mother's Day a day early and have one of my favorite take-away foods: broasted chicken. I picked up a 16-count box with a side order of jo-jo potatoes, nuked some peas, and called it dinner. We have lots of leftover chicken for days...and days...:yum:

It took a pandemic for everyone else to get up to speed with New Orleans and their "geaux cups". :LOL:
