I went completely nuts today! I added Celery to my otherwise authentic Clam Chowder!

I liked it!?:mad:

I always add celery to my clam chowder.. I like that bit of flavour. Mmm..

Your soup looks good! The pics are making me want a big steaming bowl of it...hehe.
 
I've got a Clam Chowder recipe posted on the Soups and Stews board. It has celery in it, and it's GREAT!

1 c diced smoked bacon rendered
1 1/2 c diced onions ever so slightly browed
1 stalk celery diced and cooked with the onions
Added 3 medium potatoes diced, covered with 1 1/2 c water and simmered til tender.
Added 2 c 1/2 n 1/2 and 2 c milk.
Season with 1 1/2 tsp salt and 1/4 tsp pepper
Add 3 6 oz cans chopped clams with liqour
Add 5 T butter mixed with 3 T flour to thicken.

Serve with a dash of Whatsthishere sauce and Tabasco.

This is my recipe.

ngredients:
three 10 oz cans chopped clams
1lb bacon
three cups peeled and chopped potatoes
1 1/2 cups chopped onions
2 chicken bouillon cubes
3 teaspoons Worcestershire sauce
1/2 teaspoon thyme (some times I use parsley instead)
2 cups half and half
1 cup milk
3 tablespoons all purpose flour

salt and pepper to taste

Directions:
open canned clams reserving all juice
set aside

cut up bacon, removing a lot of the extra fat
in large sauce pan cook bacon until crisp. Keeping the bacon and the grease in the pan
add potatoes, clam juice, thyme, Worcestershire sauce, onions, pepper,bouillon cubes.
Bring to a boil, reduce heat. Cover and simmer for about ten minutes or until potatoes are tender.

Combind milk, cream and flour till smooth. Add to potatoe mixture. Cook and stir until slightly thickened. Stir in Clams. Return to boiling reduce heat. Cook for a few minutes more. Add salt and pepper to taste.

If soup is too thick add more milk or cream
if soup is too thin add more flour mixing with milk or cream first!

We add a tablespoon of butter to each bowl when serving ( not at all good for you
but it tastes great!!!

Add some nice frech bread and a green salad and you've got a wonderful dinner! Use small bowls so you can have seconds! As with most soups this is better the next day!
 
made shrimp arabiata over spinach whole wheat spaghetti...chunks of feta cheese ... very good!
 
Very similar recipes aside from the chicken base and Thyme. I like that you make the whole meal in one pot. Iknow some who must boil the potatoes in a separate pot and make the roux in another and...sheesh!;)

It was surf and turf tonight.

Chuck eye center cut steak (the other tender meat) with Bordelaise sauce and roasted Femur bones.

It was peasant food today. My wife made a sort of Lebanese street food.

Chopped lamb mixed with onions, tomatoes, tomato paste, parsley and Lebanese seasonings, spread on thin dough and baked at 550* for 7 minutes.
Served with cucumber yogurt sauce.

Omlette filled with diced red potato with some toast and grape juice. Added a little bit of chili sauce on it to that was really good.

I'm still laughing at myself, I read your post as: "omelet filled with ...potatoes....toast and grape juice.":rolleyes:

We're neighbours.:)
 
Since dh has been gone to the farm all week, I've not been cooking - just eating leftovers from take out and picking up already cooked stuff at the grocery store. I had some leftover steak, boiled shrimp and grilled onions. I also had a couple of filo cups filled with lemon curd. I'm working very hard - I deserve it.

My Norwegian grandma used to put celery in hers too. I didn't much like clam chowder then, I was too young to appreciate the flavor, but now, with a little of the stuff going a long way, I would put in a bit too.
