Fish Stew - yummy! It's not heavy or anything...really light and a perfect summer dish!

I'm grilling a couple of chicken breast halves (bone in and skin on) and making pilaf.

Dinner will be something simple but my late lunch was Dolsot Bibimbap.

Sunday dinner (noon) was Shrimp Creole. The fresh tomatoes were a ice touch to the sauce.
Rice...
Bread....
Brownie.....

May eat a little chicken salad for supper......

Yum! What's the base? Fish stock? What kind of fish do you use?
I'm having leftovers.....I hate waste.

Well...slight change of plans. We went for Mexican. Fish Stew will be tomorrow. Navywife - I will PM you the recipe. It's basically sauteed shallots, petite diced canned tomatoes, lime, lime zest, white wine, fresh roasted red peppers, cilantro, dried chili peppers, and tilapia. You can also use cod if you prefer. I've tried lots of different fish - those the the only two that really work.
