I'm makiing Mark another pork chop, just preparing it a different way. There is one more from the pack I took out to thaw yesterday. I freeze them like that... in two or three chop servings. That way I can take out what I need.

To save time, I cooked myself a small seasoned chicken breast last night and cubed it. That will be part of my dinner. Either in soup or chicken salad.


What are you having for supper?
 
Busy day for me and am having a guest for dinner. I'll be preparing chicken cacciatore, Italian green beans, orzo risotto and triple chocolate cherry bars for dessert.


The chocolate cherry bars sound delicious. Is there a recipe hereabouts?

I ended up cooking bacon wrapped chicken breast which was seasoned with thyme, salt and pepper then fried both sides to seal and colour then topped with a tomato marinated with basil and garlic and finally wrapped in bacon and cooked in the oven. The chicken was very juicy and extremely flavoursome.

I served this with potato salad which I was inspired to cook by VanillaBean and I based the recipe on Msmofets but had to change a few things because some ingredients I couldn't get. I'll post the adapted recipe soon.

awwww... thank you for the kinds words, jonny! Your chicken looks almost like a Saltimbocca kind of thing... but that uses prosciutto and sage, I think. I'm craving your potato salad, by the picture. It looks so elegant. That is a tough thing to achieve with potato salad! :LOL:

I will post the link to the recipe I used for the potato salad. mark said it would have been perfect if it had had alittle mustard. :rolleyes: And, I used half Miracle Whip and half mayo.... Plus, green onion, in place of the reg onion.

That all looks very good. I like to bake my potatoes when I make salad. I think the flavor is different.
I think we're going to have Shepherd's Pie tonight.
 
I made my own seasoned breadcrumbs using hamburger buns and toasting in the oven. I just threw in some seasoned, peeled, sliced red potatoes with some baby carrots thrown in... for some color. I still plan on doing green beans.
 
I was teaching myself how to velvet beef. I did the velveting thing then did a stir fry with a basic sauce. It was good, looking forward to making beef with broccoli in the next few days.

It is surprising how tender the beef turns out.

Slice into bite size pices against the grain. Mix beef with egg and corn starch and marinate for 20 to 30 minutes.

Heat oil to 300 F fry meat for about 1 minute, remove.

Then when you use the meat in your stir fry it will retain moisture.
 
Okay, we had a DC supper.

A friend, whose wife is out of town cooking on a youth trip (in my place as I wasn't able to go) came over for dinner. I had several appointments today so decided to do pulled pork in the crockpot thanks to BigDaddy and served it with buns, my BBQ sauce, potato and green salads. We topped it of with Katie's Double Dutch Chocolate Ice Cream.

It was highly successful and really simple. I think pulled pork will become part of my repertoire.
