I'm having a craving for potato pancakes so I think I'll pick up a kielbasa when I'm out doing the shopping and tonight will be potato pancakes, apple sauce, and kielbasa.
 
I've got my semi-annual Chili fest today.......... usually amounts to 8 quarts for the freezer.............

So for dinner.................. guess what ?
 
I'll be cooking the boneless pork loin I got at Sam's club yesterday. Maybe rice or macaroni and cheese with it. Not sure. I'll poll the family for the sides.
 
Woke up to total fog this morning and, now that the fog has dissipated, it's just flat out grey and gloomy. In short, a crappy-looking day.

I have a moderately-sized beef roast that is destined for the crock-pot, along with lots of onions, mushrooms, garlic.... Once cooked, that should produce some juicy loveliness to pour over mashed potatoes. I'll complete the sides with some buttered baby peas and have some just-made potato rolls for our bread. A few of the mini chocolate cupcakes with mint Hershey's kisses are left, which will be dessert. That should do it.
 
I'm doing one of my "throw together" pasta dishes...some fresh sausage, pasta, black olives, goat's milk cheese, not sure what else I'll find in the fridge or the cupboard.
 
Irish beef stew at our house tonight I'll start it in an hour or so and let it simmer the rest of the afternoon.

For lunch I had 1 hard boiled egg and the last 2 thin slices of pork roast from last nights dinner.

For dinner (thanks to LuckyT) I will be making stuffed shells and salad.
 
DH is working today and I am packing him a farmer sausage, peas and smashed potatoes.

I am having won ton soup again thanks to my wonderful friend who makes them and gives me some every time I am under the weather! For dessert I got these great soy puddings from the Organic store which slide down my throat really well.
 
I am making a small pizza and a big Manhattan!

I have enough stuff to make two pizzas. Have any of you tried making and freezing an uncooked pizza? I don't know if I should give it a try or just refrigerate the dough and make a small pan of rolls with the extra dough, later in the week.
 
Made a HUGE batch of Chili today ............

Flank Steak with Chimichurri
Mashed Potato Cakes
Bok Choy {winter veggies are looking slim in the market:( bumping it up with garlic and ginger.

I have been on a red meat jag for about a week {anyone ever had one of those? Or is it just me?}
Never had or made Chimichurri, lots of variations out there. Mine will be with parsley, cilantro, garlic, EVOO, red wine vinegar and jalepeno. YUMMMM!

My freezer raid netted me a small amount of red gravy with sausage and mushrooms. I'll serve than on some rigatoni along with some bay scallops sautéed in butter with garlic and panko and some green beans. I may just throw that small piece of cod in the pan, too.
