What kind of cheese would you add to this salad, if any? All I have on hand are feta, cheddar, gouda, and havarti. I'm thinking goat cheese, but sadly don't have any at the moment.
Vinaigrette will have red wine vinegar, olive oil, mustard, garlic, and Creole seasonings

I think the Havarti would be too mild, the cheddar or Gouda would be nice, but I think the feta would be the best choice. It can stand on its own with the other ingredients without overpowering.

Thanks, taxlady... In the end, I didn't add any, and I don't think it would have been improved if I had. We had the salad with a sort of "low country" boil of new potatoes, onions, and sausages. A bite of the sausage with the mustardy vinaigrette was really very good.
