Curly endive, sausage salad - TNT

Although thought of as a winter salad I love it in summer, Peel seed and chop 2-3 med tomatoes, add 1 bunch finely chopped chives, 4 shallots sliced into fine rings, 2-3 tab. good white wine vinegar, 2-3 Tab. peanut or walnut oil I like walnut, salt and fresh cracked black pepper, in a small bowl, set aside. Make sure to adjust seasonings, After you grill 8oz of pre-cooked smoked sausages remove the casings and cut into fat rounds place on a med bowl and toss with 1/3 of the dressing. Cut 8oz of Gruyere into sticks while very cold about the size of 1 french fry Place in med bowl and toss with 1/3 of the dressing.set aside and let come to room temp. Cut your endive into bite size pieces toss with remaining dressing Place endive either on 4 plates or on a good sized platter place sausage on top of platter then top sausage with cheese give the salad a good douseing of coarse black ground pepper, a sliced of chopped avocado would be nice here as well.
Serve with plenty of warm crunchy country bread and honey butter
