I am curious if anyone has every had some sort of sliced pork in a salad?

I am thinking about making a salad with Pan Seared Boneless Pork Loins. My first idea was a Honey Mustard Vinagarette including some French Fried Onions.

Any other ideas? Does it sound good to anyone else? Has anyone tried anything like this?

Sounds good! Some roasted corn would be good in the salad as well. I shuck corn and brush olive oil and a little seasoning (lately it's been Southwest seasoning and it is sooooo good) and roast on the grill until the kernels start to blackened, let cool and cut the kernels off the cob.

I love pork, and bring it to put in salads for lunch often. Grilled corn is great in it as are most grilled veggies, zukes, corn , onion, peppers,smoked tomatoes. I really like my curried chutney with it, so will either add it to the dressing, or just bring it on the side.
 
I have never tried to pork on a salad. I use a marinade for pork that uses apple-cider vingar, diced apples, dried cranberries, and EVOO. It may work for a dressing.
