ISO help with Sesame Pineapple Vinaigrette

Hi guys!

Went to a very funny dinner theatre show last night where the chef had prepared a basic garden salad with a sesame pineapple vinaigrette. Everyone in the family loved it so I decided to take on the task of seeing if I could come up with something close to it. It had just a hint of sweetness and was a bit tangy. Not overpowering in any specific way. In fact, I'm not sure it would have been that easy to spot that it was pineapple. I think I'd actually like to make something "better" even.

So far I'm thinking something along the lines of (I haven't tried this yet as it's 10am  ):

Sesame oil
Pineapple juice
Ginger
Garlic
Salt
Pepper
Lime juice

But I feel like there's probably something missing - something that can enhance the sesame/pineapple flavours.

Thoughts or ideas or other successful recipes?

Thanks!
