Rice Salad with!!!

First mix up a lemon vinaigrette you will need 1/3 cup fresh lemon juice, 1 tea. Dijon,2 garlic cloves crushed,1-2 Tab. fresh chopped herbs,such as thyme,parsley and marjoram,chives,1.4 cup evoo salt and pepper Whisk all together put in frig til rice salad is ready but bring to room temp before using. Now for the salad, you need 1 cup of uncooked rice then cook and cool it to room temp. Put the rice in a med sized bowl drizzle with 1/2 cup of the vinaigrette over the rice using a fork toss to mix in the dressing. Set asice for 25-30 min. Add 2 cups cherry tomatos, 1 small tiny diced red onio that you've soaked at least 30 min in cold water.also add 3/4 cup pomegranate seeds, 1/2 cup of fresh cranberries minced in a f/p and toss again. Pour the rest of the dressing over the rice and toss season with salt and peppr add 2 tab each of fresh parsley and chives,chopped serve.
