If I'm having, potatoe salad, Macaroni salad, and baked beans, do I need enough for everyone? or do I split the amounts by how many people, like you do if your having more than one meat. For example Approx. 175 people divide the people by 3. That would mean I would need approx.58 servings of each salad dish. I'm so lost at doing a big party.

Don't make full servings of each as people will take smaller portions so they can try several things. However some people won't want macaroni salad but loves baked beans. For a party of 175 I would probalbly make 75 servings each, maybe 100 if there are not many other side dishes. But if people are going to be going off to different parties, stopping for a bite at each party, yeah, I think your formula is great!

That's a good formula- in fact, I'm going to remember it next time I host a big party. Also, leftovers are never a bad thing, and beans save well for a few days.
