My New Year's Eve Luau Menu

Kalua Pua'a
3 lb Pork Butt Roast
2 C water
1/4 C liquid smoke
1/4 Kosher salt (or Hawaiian sea salt)

Put roast fat side up in a baking pan or Dutch oven. Mix water and liquid smoke pour over roast and rub in. Cover roast with salt. Cover pan with a tight fitting lid or tightly sealed foil. Bake at 350 for 3.5 hours. Remove from oven. Shred meat with forks, pour liquid back into meat. Serve on Kings Hawaiian Sweet bread.

Roasted Pork TenderLoin in Polynesian BBQ sauce
Pork Tenderloin
1/2 C hoison sauce
1/2 C black bean sauce
1/4 C tamari
2 tsp fresh grated ginger root
1 1/2 tsp Chinese 5 spice
3 Tbls minced garlic
2 Tbls brown sugar
1 Tbls dry sherry
2 Tbls tomato paste
2 tsp dry mustard
1 tsp red food coloring
Marinade pork in remaining ingredients 24 hours... roast, serve in slices.

Chicken Long Rice
1 bundle (1 3/4 oz.) bean threads (long rice)
2 pounds chicken (breasts or thighs)
2 tablespoons macadamia nut oil
2 cloves garlic, minced
6 cups chicken stock
1 teaspoon minced ginger
1/4 cup soy sauce
1 can (10 oz.) whole mushrooms, drained or 8 dried shiitake mushrooms*
1 tablespoon thinly sliced green onions

Soak long rice in warm water for 30 minutes; drain and cut into 2 inch lengths. Remove skin and bones from chicken; reserve for stock if desired. Cut chicken into 1-inch cubes. Heat oil in a large skillet and saute chicken and garlic until light brown. Add stock, ginger, soy sauce, mushrooms and long rice. Simmer, covered, for 15 to 20 minutes or until chicken is tender. Sprinkle with green onions just before serving. Makes 8 servings.


Ahi Poke
2 pounds fresh tuna steaks, cubed
1 cup soy sauce
3/4 cup chopped green onions
2 tablespoons sesame oil
1 tablespoon toasted sesame seeds
1 tablespoon sambal olek
2 tablespoons finely chopped macadamia nuts

In a medium size non-reactive bowl, combine Ahi, soy sauce, green onions, sesame oil, sesame seeds, sambal olek, and macadamia nuts; mix well. Refrigerate at least 2 hours before serving.

*soak shiitake mushrooms in warm water for 15 to 30 minutes, then remove stem and cut into quarters

Hawaiian Potato Salad

4-5 large potatoes
1 cup shell macaroni-dry
1-2 carrots chopped
2 celery stalks-chopped
2-3 pickles to taste-chopped
1 cup peas
2 stalks green onion-chopped
salt and pepper to taste

Dressing:
1 cup mayonnaise
1/2 cup Zesty Italian dressing
2 T. pickle juice (or less)

Boil potatoes until tender. Cool and cut into cubes. Cook macaroni per package directions. Toss with remaining ingredients. Add dressing.

Salmon Cream Cheese Dip
Rice Pudding (cooked rice, crushed pineapple, homemade whipped cream)
Banana Bread

Fruit tray... pineapple, kiwi, star fruit, orange slices

Rum Drinks
Soda, Water & Kona Coffee
Champagne

Rum balls (and other Christmas cookies left over in the freezer)

I 'think' that's it!
Can you think of anything else that would go well in a luau?

Well... I do have some luau music... so we'll see! I guess it depends how many mai tais I've had!

You need to teach us, wasabi, you are the expert. I want to come to this luau, even though I do not have a mumu, but I can wear my Norwegian bunad, will that work?????

Yes, it certainly would wasabi, it certainly would. I also have a 1500 viking dress, if you want to borrow (it is not that old, it is a modern copy)
 
I've been wanting to throw a real luau for years now (it's been a dozen since I lived there, and have quite a few correspondents in Hawaii). You've inspired me. Maybe for my summer party this year (I 'do' two parties a year). I'll bet I've been to more luaus than almost everyone on this site put together, and I'm dying for some of the dishes we used to consider just normal food. Chicken adobo. Chicken Long Rice. I cannot remember what it was called, but a dish with the pork cooked in the ground, then stir fried with cabbage. Sate. Poke. Sushi and sashimi. Chow Mein which I used to buy by the tub fulls for parties (in the continental US it is billed as lo mein). Oh, dear, I'm waxing nostalgic. Hope your party went well!!!
 
I've never been to Hawaii or a luau and I think I pulled it off pretty well. A friend from another board said that she stir fries the kalua pig w/cabbage. I didn't make chicken adobo (but I used to make it all the time... my X is Filipino)
Anyway... we had a lot of fun... it went great... everyone loved the food & drinks... I think the favorites were kalua pua'a and ahi poke. (and the Blue Hawaiians!)

Time to start planning my next party... I do about 2 a year too!
