Wild yeast, floating around in the air is what make sourdough starter. That being said, I once had a bottle of apple juice sitting in the back of the fridge for who knows how long. My youngest child, a young teen at the time, saw the bottle and poured herself a glass off what she thought was juice. She quickly brought it to me and stated that it tasted funny. I sipped it and found that it had become apple wined, and was quite strong.

I don't know why this memory just popped into my head. I know that the juice was pasteurized. I also know that the white film on the outside of blueberries that make them blue is actually a yeast that will cause them to ferment over time. I'm thinking that the same wild yeast that makes sourdough, turned my apple juice into apple wine. Watcha think? I don't use alcoholic beverages, but I am just a curious fellow.
