A Most Intense Lemon Cooler
This makes a truly flavor packed lemon cooler that ca be enjoyed ice cold, straight up, or mixed with something. It uses all of the lemon except for the seeds and pith. Talk about something to wake up your mouth. I can also see this as a base for cooking.
1/w cup sugar
1 quart ice water
he lemon juice.
Zest one, whole lemon and place the zest into your blender. Peel th lemon and separate into sections. Remove the seeds. Place the sections and sugar into the blender with /2 cup cold water. blend on high for two minutes. Pour into a quart container and fill the rest of the way with ice water.
You get the nutrient rich, and flavorful lemon oil from the zest, all of the fiber and mouth-feel from the pulp, and all the vitamins and other nutrients, along with great lemon flavor from the juice.This could be mixed with unflavored gelatin to make a lemon gelatin desert, or used instead of water to make a cake, or brushed onto chicken before baking/roasting.
Because of the zest, this lemon drink has more of a bite than does pure lemon aid. It's very tasty.Enjoy.
