ISO Gluten-Free Substitutions and info

Today on Saturday kitchen Ken Hom was describing turning rice into flower and making noodles. He said that Rice flour is glutton free. Can Rice flour and All purpose flour be interchanged?

What are the problems with cooking glutton free?

My wife knows a little more about this than I do. Our son has many food allergies. Wheat and oat being one of them. I know she buys corn and rice pasta for him. I do not know if they can be interchanged. I got curious and googled it. Here is a link I found. Hope it helps!

You might not have noticed that this thread was started 9 months ago and hasn't been very active. Maybe our two posts will attract the attention of those knowledgeable on the topic but in the meantime, if you click Search and type Gluten Free you'll see almost 1000 results.

Wish I knew more about it.
