Substitute for corn

My brother gave me this recipe to try. I'm on an allergy elimination diet and have to avoid corn. Is there a substitute?


Lime and Honey Glazed Salmon with Warm Black Bean and Corn Salad

1 medium red onion, chopped
2 large garlic cloves, chopped
1 tsp red pepper flakes
1 tsp ground cumin
Salt and pepper
Juice of 2 freshly squeezed limes
3 tablespoons honey
1 tsp chili powder
4 salmon filets
1 red bell pepper, cored, seeded, and chopped
1 can of corn kernels
1/2 cup chicken stock
One 15 ounce can black beans, rinsed and drained
2 to 3 tablespoons fresh cilantro leaves, chopped
6 cups baby spinach

Combine juice of one lime, honey (heated up in the microwave to make
it thin), chili powder, salt, pepper, and pinch of cumin. Marinate the
salmon filets in this (I do it in a large Ziploc bag for easy cleanup)
(I have also added Penzey's Bangkok Blend spices to this with good
results)

Preheat a skillet with 2 tbsps olive oil. Add the onions, garlic, red
pepper flakes, cumin, salt, and pepper. Cook, stirring occasionally,
for 3 minutes.

Preheat another skillet with 2 tablespoons olive oil. Add the salmon
and cook about 4 minutes on each side. (Afterward, sometimes I'll put
the salmon in foil and seal it so it can continue to cook internally a
little bit).

To the cooked onions, add bell peppers and corn and cook for one
minute. Add the chicken stock and cook for another 2 minutes. Add the
black beans and cook until the beans are heated through. Remove the
skillet from heat and mix in the juice of the second lime, the
cilantro and the spinach.
 
I would just use extra black beans in place of the corn, or maybe another time of bean.
 
it is very hard to elimate corn, thats why a lot of people are told they are alergic to it even though they aren't..there's corn oil, corn syrup,corn sweetners, corn meal, etc hidden in a lot of foods. You may want to check the ingredients in the canned beans. :)
 
I would try a mixture of wild rice and white rice. That seems like it would be the most suitable for your recipe.
