Sweet wine vinegar question

We have been given several bottles of rose and sweet white wines as gifts. I don't like sweet wines, but even more, I hate to waste stuff. Am thinking of making some vinegars. I may have a bit of mother from our vinegar stash, but not the 8 oz. I saw in one recipe. Tips would be welcomed!
 
Just a suggestion, but can you use the Rose as you would use Marsala?
 
I like to either drink or cook with wine. Unfortunately, the rose sets my teeth on edge, it's so sweet. I just figured the best use/demise would be in a vinegar.
