By chance, anyone have recipe for peking duck.

I have not seen this before but by chance anyone has recipe for "Peking duck". I tasted it when i was on tour in china and it taste really good. If anyone has it, please help to post. Thanks.!
 
Peking Duck is used as a three course meal. The carcass is used to make a broth, the skin is used in the pancakes and the meat is served in a choice of ways - my preferred version being san bow choy. I have also seen more traditional recipes where it takes 24 hours to prepare the duck as you have to dry out the skin properly before the second round of cooking.
