Made this for supper last night and it was great..Pre heat oven to 350.
1 fryer cut up, washed and patted dry. coat chicken with flour. Heat oil in large skillet. Add chicken and brown on both sides, Salt and pepper to taste.Remove from skillet and put in shallow roasting pan.
Sauce: 1 can pineapple
1 cup sugar
2 Tbsp. cornstarch
3/4 cup vinegar
1/4 Tbsp. soy sauce
1/4 tsp ginger
1 chicken bouillon cube,(or granular)
Drain pineapple, pouring syrup into a 2 cup measuring cup. Add enough water to make 1 and 1/4 cup liquid..In medium saucepan combine cornstarch, vinegar, sugar, soy sauce, ginger and bouillon cube. Bring to a boil and boil 2 min. Pour over chicken (save a little of the sauce to put on rice) and then top off with the drained pineapple. Bake uncovered for 1 hr or until chicken is done. Serve with rice.
 
Sounds yummy...kind of a sweet/sour type of thing. What do you think about adding some chopped sweet peppers and diagonally sliced carrots to the dish?

I did, went to the garden and got fresh green peppers and fried them in a little butter and added them to the rice...YUM
