How well to cook chicken liver?

Is chicken liver safe to eat when outside is still reddish?

i don't know about safe, but i don't like the taste. i love fried chicken livers. just cook on med. so the outside doesn't get to done before the middle is cooked.

Dredge in flour, pan fry in clarified butter, add fine chopped shallot, de-glaze with sherry. Goes great on a bed of wilted spinach. ]The outside should be nice and browned, the inside should not be gray, try not to cook more than 6-8min, max.

I soak mine in a little milk to remove any bitterness then lightly dust with seasoned flour and fry on a med heat till just pink but not bloody in the middle.
I love adding some fried onions and peri- peri too and serving with mash or crispy bread and butter.
