Amazingly simple, slice completely thawed chicken breasts down the middle as in to make a flap. Gently stuff with pesto sauce and place in greased baking pan. Cook for about 30 - 40 minutes at about 350. Five minutes before finishing, sprinkle a little bit of parmesan cheese on top.

Sounds good, thanks for the recipe. I am not a huge fan of pesto, but DW loves it so I will have to make this for her.

Hey emz, glad it turned out well. Your Dad sounded like he enjoyed this, even though it was the dreaded "meat substitute"!! What did the rest of your family think?

My family actually quite liked it. I think dad did the most actually. After he had made his horrible pesto jokes, of course. My sister wasn't home, but I think my mom liked it too.
