Fun with Figs...

My favourite picnic sandwich for taking down the shore:

French baguette
3 fresh figs (not dried, please not dried!) [or enough figs to cover the loaf]
Arugula leaves
Goat cheese (preferrably with lemon zest in it)
Pear vinegar and olive oil
Fresh cracked black pepper

Slice the bread, spread with the goat cheese. Layer the arugula over the goat cheese and sprinkle with the oil and vinegar. Slice the figs and arrange over the arugula. Grind black pepper over the figs, top with the bread.

This is wonderful with Sangria, watching the waves hit the shore. Fresh oatmeal coconut cookies are a great dessert, too.
 
Top the split figs with goat cheese and run under a broiler. Serve with baguette slices for a nice appetizer.
