I'm just a guy that likes Banana Bread and doesn't want to waste overly ripe bananas. When I add one very ripe banana to a store bought ready mix, either muffin or loaf, the result is too moist. I've tried reducing the fluid amount a bit, but it's still too moist.

Is it possible to adjust the ingredients to get a decent result?

Reduce the amount of liquid by about the same volume as the bananas you use. The consistency of the batter should be the same as when you make it without banana. You can also add some mashed banana to American style pancakes to make yummy banana pancakes.

Makes sense ...

yah ... I remember my mom's great banana and apple pancakes! I think the apple ones were my favorite ... cored sliced apple slices sautéed with the batter poured over them!

Or those batter friend bananas with honey drizzled over them!

You could also cut squares of puff pastry and top with sliced banana and sprinkle with cinnamon sugar, leave a little room at the edges for pastry to puff up. Dot with butter and bake till pastry is puffy and golden and banana cooked. Serve with whipped cream.
