Making Peter Reinhart's cornbread today wish me luck

hey i've had my eye on this recipe from the bread baker's apprentice for the last week or two & today i'm finally going to try it out. hope it goes ok... right now the cornmeal is just soaking in the buttermilk & i'll get to do the rest this afternoon. further bulletins as events warrant! :chef:
 
hey everything went smoothly. he said it should be like thick pancake batter & it was. the only thing i had my doubts about is the bacon. i accidently overcooked it & i think i should have undercooked it because it was to go on top of the bread just before putting it in the oven for 1/2 hr & cook some more. i wondered if i should have cooked more bacon but i didn't. something to keep in mind next time i guess. ~20 more mins to go.... :cool:
