This is my mother's recipe for Zucchini Bread I have been making it for 20 years. It is so good warm.


  • 3 eggs
  • 2 cups sugar
  • 2 cups shredded zucchini (about 3 medium)
  • 1 cup oil
  • 2 teaspoons vanilla
  • 3 cups all-purpose flour
  • 1/2 cup chopped nuts
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves

Preheat oven to 325F. Grease (crisco is best) bottoms only of two 9x5 pans.
In a big bowl, beat eggs until a wire whip until foamy. Stir in sugar, zucchini, oil and vanilla. Add remaining ingredients and blend well by hand. Do not use a mixer.
Divide batter equally between 2 pans. Bake at 325F for 50 or 60 minutes or until a toothpick inserted in the center comes out clean.
Cool for 10 minutes, remove from pans. Cool on wire rack.
 
Yes, grated with a grater with big holes. Also if the zucchini is not too tough you do not need to peel it.
