Fish in Sweet and Sour Sauce

We love Halibut, but this work as well with Roughy, or Sole so give it a try and see what you prefer.Dust your fish with flour, shaking off the excess. Dip in 2 beaten eggs then coat in 1 cup of panko and 1/4 cup parmesan. Set aside.Melt 2 tab butter in non stick skillet cook fish 2 min on each side. Place fish on warmed platter. Discard any fat. Add remaining tabls butter to skillet,.now add 1-1/2 cups of dry white wine now cook til wine is reduced by half. Add the juice of 2 lemons,1/3 cup sugar and slat. cook and stir over high heat about 1 min. Return fish to skillet cook 2 min. put fish on platter pour sauce from the skillet over fish serve with rice sprinkle fish with fresh chopped parsley.

I love to season up fish, just plain is not for me. So when I see things like this one I use it to death:LOL:
