Petrale Sole and Avocado

I bought 6 slices of petrale sole, I plan to salt and pepper it then dust with flour, then Saute it in grapeseed oil til light brown. Then I'll mash an avocado with salt and pepper,lemon zest and juice a small amout of mayo to hold it together, this will be used to paint the fish and I plan to top each piece of fish with some Teleme cheese that I had sliced put it under the broiler til the cheese starts to bubble. I plan to serve the fish with green beans and bacon, rice and bread and butter plus a salad.
