Salmon Fillets With Roasted Tomatoes

Hope you all like my recipe, thought I'd share. It's simple and healthy!

4 large tomatoes, cut in half

2 TB olive oil

4 6 oz. Salmon fillets

½ lb. Sliced mushrooms

1 lb green beans trimmed

¼ cup grated parmesan cheese

1 lemon sliced



In large roasting pan drizzle tomatoes with olive oil; roast in a preheated 425°F oven for 30 minutes, adding salmon and mushrooms for final 10 minutes of cooking time. Meanwhile cook green beans in boiling salted water for 3 minutes or until just cooked; drain well. To serve: Sprinkle parmesan cheese on tomatoes. Arrange on plates with salmon, mushrooms, and green beans. Garnish each plate with a slice of lemon.
