Salmon Loaf with Cornmeal

Looking for a healthier binder than bread or cracker crumbs. Like quinoa but it doesn't hold together well.

Wondering if cornmeal might work.

You could use wholewheat bread or wholewheat crackers. Something gluten free isn't likely to bind well.

Mashed potatoes? or potato flakes, as in Instant Mashed Potato flakes.

Mashed potato flakes is a great idea. After all, I make salmon cakes with mashed potatoes, why not in as salmon loaf, too?

Not that I want to nitpick on this, but gram for gram, potatoes - and dehydrated potato flakes - offer better nutrition than the average slice of bread, and definitely better than crackers. Gluten, in particular, can be a concern for many people.
