I've made this with cod. It was good, and I'm not a big fish fan. My family liked it alot.

Flounder Au Gratin

2 tsp. margarine
2 Tbsp. flour
1 cup skim milk
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. paprika, optional
1 lb. frozen Flounder Fillets, thawed
2 Tbsp. grated Parmesan cheese
In a small saucepan melt margarine over low heat. Remove from heat and stir n flour. Whisk in milk 1/2 cup at a time. Return pan to heat and cook, whisking or stirring constantly until thickened and simmering. Remove from heat, stir in salt, pepper and paprika.
Heat oven to 400° F. Arrange Fillets in baking pan. Spoon sauce evenly over Fillets and sprinkle with cheese. Bake 20 minutes until fish is white and opaque.
