Walleye filets with apples and carrots

Zanderfilets mit Aepfeln und Moehren

1 1/2 pounds Walleyefilet or plaice filet
4 T lemonjuice
1 pound carrots
1 pound apples
1 cup cream
1 T mustard
gravy thickener (?)
salt/pepper
butter oil

wash the fish and baste (?) with the lemon juice
peel the carrots and the apples
cut the carrots to small sticks, clean out the appples and cut into slices
heat the oil, add the carrots and saute for about 5min.
add apples, cream and mustard, season with salt and pepper, thicken with the gravy thickener.
Cut the fish into slices and put it on top of the veggies.
let rest at low heat for another 5min

serve on a warm plate, top with chopped chervil.
serve with Kartoffelplätzchen

Oh my - this looks really good! I'll have to tell dh to fish for walley this summer, not just bass!

If you haven't had Walleye before, you should. It's my absolute favorite fresh water fish especially freshly caught. I'll try this recipe, I haven't made it this way before.
 
We don't have walleye down here in Southern Illinois, but for a while, HB had to work up north, in McComb, and the guys spent their spare time fishing for walleye. They had a lot of fish fries up there, but he also brought some home to share with me, and they were SO GOOD! There's something special about cold water fish.
