I was making a crustless quiche for a light supper this evening - my ingredients included green and yellow peppers, green onion, mushrooms, diced pepperoni, sliced black olives, cheddar and mozzarella cheese and eggs. I had all the ingredients in the baking dish and whisked four eggs in a bowl. I added about 1/2 tsp salt, but didn't mix it yet, and then decided to add a few TBS of sour cream...then I whisked it. It cooked up beautifully, smelled great, and then I took the first bite. YECH! A big crunch of SALT. Apparently, by adding the salt and sour cream together, the salt did not distribute evenly, and instead formed little salt globules within the sour cream. Unfortunately, it was just not edible, because you never knew when you might bite into a salt globule. A lesson learned. Whisk after adding each ingredient.

Oh, that's one I never knew! Thanks Karen, I will definitely keep it in mind. I am always salting at the last minute....and throwing in extra ingredients!
